Rolling Vacations’ Campfire Breakfast Sandwiches
Ingredients (per sandwich):

1 English muffin, halved

1 egg

2 slices of cooked bacon

1 slice of cheddar cheese
-
Butter
-
Salt & pepper to taste
Instructions:

Prep your fire or camp stove and heat your cast iron skillet or griddle.

Cook the bacon in your skillet until crispy, then set aside (or bring it pre-cooked for faster mornings).

Crack the egg into the skillet and cook until set. You can pop the yolk if you want it fully cooked. Add salt and pepper.

Toast the English muffin halves cut-side down in the pan until lightly golden (add a bit of butter for extra flavor).

Assemble your sandwich:

Bottom muffin
-
Cheese slice
-
Hot egg
-
Bacon
-
Top muffin

Wrap in foil and set near the fire for 1–2 minutes to melt the cheese and keep it warm.
